200ml recently pressed lemon juice
500g caster sugar

For the Cocktail (yields 850ml, serving 10)

A few cranberries, to garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Citrus Syrup: Combine all the items into a pan, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, remove from the stove allowing it to cool entirely. Pour into an sterilised bottle, cap it keeping it in the refrigerator, it can be stored for around a month.

For the Premix: Mix the specified liquid ingredients into one sizeable container, let it rest for an hour, then filter it best through muslin, to ensure it's fully clarified.

When ready to serve: Pour 85ml of the batch mix into your stirring glass packed with ice, and agitate lightly for a minute to chill. Strain into a chilled martini glass or equivalent, decorate with a few cranberries and complete it with a quick spritz of mandarin oil above the glass.
